Chicken Cheese Goujons with Tomatoes

A delicious chicken recipe to make your kids go wild with happiness!
Ingredients
- 1 skinless chicken breasts
- plain flour
- 1 large free-range egg
- 2 -3 Garlic cloves
- 2 -3 Green Chillies
- Cheddar cheese, finely grated
- Fresh white fine breadcrumbs
- Vegetable oil
For the thyme tomatoes
- 300g cherry tomatoes, some halved, some quartered
- 1 tbsp extra-virgin olive oil
- 1 tbsp roughly chopped fresh thyme
- 1 garlic clove, finely chopped
- 1 tsp vinegar
- 1 tsp light brown sugar
Method
- Slice chicken breast into small strips. Season the flour and place in a shallow bowl. Whisk the egg with the finely chopped green chillies and garlic in another bowl and then combine the crushed cheddar cheese and breadcrumbs in a third.
- Roll the chicken strips in the flour; shake off the excess, than dip in the egg. Finally, roll in the cheese crumbs and deep fry till golden brown.
- For the thyme tomatoes, place the tomatoes in a bowl with the rest of the ingredients and season. With the back of a fork, gently squash to release some juices and combine the flavors. Set aside to marinate.
- Serve crispy golden chicken cheese goujons with the thyme tomatoes on the side. I bet your kids will love this healthy snake.
